Wild Game SausagePreparation of Wild game ideas?

I discovered that my freezer has stopped working a week ago. the meat has begun to melt, but it is still very cold. the freezer is in my shed, its been really cold here. So I want to start saving the meat, I thought I could smoke a lot from him. I have a Turker and wild deer and elk and one quarter of the fish, the fish is easy. I was thinking of doing to Turkey jerky, hunting wild turkey and sausages and burgers to venison and elk. any recipe or cool tasty cooking tips are greatly appreciated. I like trying new ways of cooking game. I like spicy food so if you have these recipes, Bring It On! Thank you.

If youre on the meat thaw too quickly before getting a new freezer, you can always "corn" venison. Im very fond of the flavor of venison and roast corned actually do more this way each season. In the days before the farmers and hunters refrigeration corned meat as a means of preserving it. It takes time consuming in the refrigerator. As for Turkey I like to bone him, keeping separate the breast meat, inject the turkey breast meat with the marinade, cajun injector batter it in the turkey fryer.
REVISED:
Oh, I just remember if you have a set of rear quarter ... I just tried LEM kit cure venison ham back last month he was eating something tasty IVE centuries in the kit costs only $ 13.00 and you only need a smoker

Roast beef, Shred-it and put it in barbecue sauce and cook on low all day, then cool and freeze. You'll have barbecue sandwiches for a long period. Or make a lot of enchiladas and freeze them. Oh yah, you do not have a freezer! Sorry. Wouldnt it be better to go buy a freezer?

Roast turkey (get one of those plastic bags to the grocery store then roasting it will not be too dry). Or you can fry the whole turkey, or cut into small nuggets, bread and fry. Make some deer jerky. Get that burger you can do something with it. Leave the nets / sticks around if you can, they are good on the grill.

get some Green Chile and to make a big stew pot of Green Chile and fry the turkey or get your self a new freezer

I think you just try to make everyone jealous ;-)
