Vive le Vegan Cookie Recipe? I wonder if anyone has the "exact" recipe for chocolate chip cookies from the book "Vive le Vegan. I read many blogs that Vegan is a great recipe. I do not have access to books, nor can I find the recipe online.
Thank you all
They are called Homestyle Chocolate Chip Cookies ...
1 cup unbleached flour all-Puros
1 tbsp teaspoon baking powder
1 / 2 c. baking soda
1 / 4 cup unrefined sugar
1 / 4 c. teaspoon sea salt
1 / 3 cup pure maple syrup
1 / 4 c. blackstrap molasses
TO1 and a half c. tsp pure vanilla extract
1 / 4 cup canola oil (a little generous)
1 / 3 cup chocolate chips non-dairy
Preheat oven to 350 degrees.
In a bowl, sift flour, baking powder, baking soda. Add sugar and salt, and stir until smooth.
In another bowl, combine the maple syrup with molasses and vanilla, then add oil and mix well. Add wet mixture to dry with chocolate chips and stir until well blended (do not overmix).
Place large spoonfuls of dough on a baking sheet lined with parchment paper and flatten a little.
Bake for 11 minutes, until lightly browned (if you cook for much longer, they dry out). Cool on the sheet not more than 1 minute (again to prevent drying) and then transfer to a cooling rack.
Makes 8-10 large cookies
I have not tried these because I like the classics, but it does sound ... hope they happen to you!
The book is very nice ... try to get it through Amazon, if you can ...
