Venison LoinHow do I get information on deer loin.?

cannot find locations on the loin of venison good way to try to get some help Thanks.

Loin of venison marinated Hoison
Ingredients
1 / 3 cup hoisin sauce
3 tablespoons rice vinegar
2 tablespoons soy sauce
2 tablespoons minced garlic
1 / 4 cup chopped green onions, including green parts
1 tablespoon honey
1 / 2 teaspoon salt
3 tablespoons olive oil
1 rack of venison boneless strip, 2-1/2 to 3 pounds, well trimmed, silver skin removed

Instructions
Whisk together the hoisin sauce, vinegar, soy sauce, garlic, green onions, honey, salt and oil, and scrape into a large resealable plastic bag. Add the venison and seal, turning to coat. Marinate in refrigerator for at least 4 hours. Remove venison from the refrigerator and return to room temperature before cooking.

Light a gas or charcoal and barbecue over medium heat. Grill for 15 minutes on each side, turning once, for medium rare.

Yield: 6 servings

I do not have a website, but in the Nero Wolfe Cookbook by Rex Stout there is a recipe for venison chops. Marinate in vermouth, red wine vinegar, olive oil, with a few juniper berries, herbs and vegetables for 24 hours. Take chops and dry and brown. marinade through a sieve and add the sour cream and heat. Unbelievable.

I can give you some advice! we have deer per week, and I learned to cook without making a piece of leather footwear. # 1 Do not overcook. Use a meat thermometer and get the temperature of pork doneness.Loin melt in your mouth if you marinate the beef with your favorite spices and a little olive oil. (Just half an hour in the marinade works) Cook on grill and baste with garlic butter.It is great as is or you can make shish ka bobs (sp) with it. Also along for a whole season and you can wrap with bacon (bacon well) and the grid (very good)! Hope this helps.
