Is authentic bratwurst blank containing chicken and veal only? I see stores selling sausages and he is Polish sausage. Is someone confused?
Bratwurst is made from pork and veal. You can substitute beef for the veal, but unless you are making it a ton, it is not worth the compromise. The recipe is based on a total of one pound of meat. You can work on the report for larger quantities.

Mix non-meat ingredients in a bowl and add ground meat and mix well.
Chill in freezer for 30 minutes.
Mix again and grind through 1 / 4 "plate.
Orders mutton or pork casings and air dry for 30 minutes or until dry to the touch.
Refrigerate or freeze for use.
