I marinated steaks, chicken and pork chops, but can you roast marinade as big as, beef, pork or chicken over. If so how would it marinade and how long would it to the marinade? A tenderizing marinade must # contain an acidic ingredient like lemon juice, yogurt, wine or vinegar or a natural tenderizing enzyme in papaya, ginger, pineapple and figs.

Combine wine, vinegar, garlic, mustard, pepper and sugar. Place roast in a meat utility or a plastic bag, add marinade, turning to coat. Cover the dish or tie the bag and marinate in refrigerator for 6 to 8 hours or overnight. Remove roast from marinade and reserve marinade. Place roast on a broiler pan and broil for 20 minutes, turning and basting with the reserved marinade occasionally.
******************************** ROAST BEEF MARINADE BBQ
2 cloves garlic, crushed 1 / 4 C. Olive oil or salad 1 tbsp tea. rosemary leaves, crushed 1 / 2 c.. mustard 2 v. tea. soy sauce 1 / 4 C. wine vinegar 1 / 4 C. apple juice or sherry
Cook and stir garlic in oil, add rosemary, mustard and soy sauce. Remove from heat and stir in vinegar and sherry.
Makes 3 / 4 cup.
Select 3-4 pounds chuck roast, 2 1 / 2 to 3 inches thick. Prepare Marinade (above recipe). Place roast in a glass dish and pour the marinade over the roast. Cover the dish with plastic wrap. Refrigerate 24 hours, turning the meat regularly. Remove meat from marinade. Ketchup stir 2 tablespoons of the marinade and heat through on the grill. Brush the marinade over the meat.
Place roast on grill 4 inches from medium coals. Cook 1-1 hours 1 / 4 or until tender, turning frequently and basting every 5 or 6 minutes with hot marinade. Serve roast rare in the center, gilt.
