What is a good recipe for pickled hot sausages (kielbasa)? It depends on how quickly you want to eat. Pickling recipes take some weeks to resolve ... Here's a good I found on Google:
Hot Pickled Kielbasa Con

Ingredients
1 / 2 C sugar
1 / 2 C water
1/2- 1 C crushed dried red pepper (depending on how you want it hot)
1 / 2 C salt (not iodized)
4 lbs kielbasa
white vinegar 1 / 2 gallon
1 gallon glass or plastic jar
Procedure
Cut the sausage and put in a pot gallon. Mix remaining ingredients, using 2 C vinegar in a saucepan and bring to a boil, stirring occasionally until salt and sugar are dissolved. Pour over sausage jar. Fill jar with vinegar and shake well. Shake daily for 10 days.
You can quarter revenue and just make one liter. I make one gallon because the kids love.

Here's one that should marinate for two days:
Pickled Sausage
Cooked smoked sausage marinated in a brine for an irresistible red
indulgence.
Preparation time: approx. 5 Minutes.
Cooking time: approx. 5 Minutes.
Duration: approx. 48 Hours
Makes 20 servings.
8 cups water
5 c. soup. salt
8 cups white distilled vinegar
15 drops red food coloring
20 links smoked beef sausage
In a large saucepan over medium-high heat, combine water, salt, vinegar,
and red food coloring, bring to boil. Cut sausages into halves
or third, depending on the size, and place in a large sterile container. Pour
mixture of hot vinegar with sausage, secure the lid and let stand for
2 days before serving.

Ukrainian Kielbasa
12-15 lbs of lean pork butt
5 pounds lean ground beef
1 lb veal (cubed)
1 tablespoon garlic salt
1-2 tablespoons salt
2 tablespoons mustard seeds
1 head garlic
1 liter of water
Paprika (sprinkle) Grind all meat with a meat grinder with a large hole setting. Crush garlic and mix with other spices in minced meat. Knead together thoroughly. Knead in the quart of water slowly until all is absorbed. Soak sausage casings in cold water with several changes of water to soften them. Put funnel hose end push sausage. Tie the end of the envelope. meat stuffing and put in the crank and fill casing. Prick casings liberally to clear out the air before placing it in the oven. Bake at 325 F for 1 hour. Add water in bottom of pan, if necessary.
