Chicken Pot Pie is a great way to use left over chicken to make soup. I use phyllo dough if the recipe is "easy", and I use Pareve margarine to the recipe "kosher."
Ingredients
2 v. soup. margarine (Pareve)
1 onion, chopped
2 v. soup. flour
1 tsp tea. salt
pepper
chicken broth 1 1 / 2 cup
1 cup non-dairy cream
2-2 1 / 2 cups cooked chicken, cubed
10 oz bag of frozen peas and carrots
puff pastry, thawed according to the instructions
Preparation:
1. Preheat oven to 375 degrees Fahrenheit.
2. Melt margarine and sauted onion until golden.
3. Stir in flour, salt, pepper. Cook over low heat for one minute.
4. Stir in chicken broth and cream. Stir until thickened and bubbly.
5. Stir in chicken and vegetables. If more liquid is needed, add more soup or cream. Adjust seasonings to taste.
6. Pour the mixture into a bowl.
7. Roll out the dough enough to cover top of dish. Place dough over the mixture and observe the sides of the dish. Brush dough with beaten egg. Prick with a fork in several places so steam can escape.
8. Bake for 35-40 minutes or until golden brown.
Remember, if your kitchen is not kosher, any food that you make in this will never be kosher.
