How can I make Italian sausage - what ingredients (mainly spices) are used to obtain this special spicy flavor I am particularly interested in the spices used
I'll give you my secret recipe for Italian Sausage -
3-Lb ground pork very thin - must be trimmed of all fat
Fennel seeds 2-CS
Sugar 1-CS
1-teaspoon salt
1/4-Tsp black pepper
1-CC oregano
seed.It fennel has a slight licorice flavor.
Cayenne pepper and fennel
Use garlic powder, red pepper flakes (for heat), salt, onion powder, pepper, oregano, basil, fennel (for sweet), and any other spices you like Italian.
