Planning a brunch and want something different from the usual? These recipes are for you too. Pork and apple breakfast sausage is a unique twist on sausage. Pork sausages BREAKFAST APPLE
1 lb. pork tenderloin, cut into pieces
1 / 2 medium to large apple, peeled and cut into pieces
3 / 4 c. tsp poultry seasoning
1 / 2 c. paprika
1 / 4 c. salt
Put the pork, apple and spices in the bowl of a food processor fitted with metal blade. Process about 1 minute until finely chopped. Wash hands thoroughly and then using your hands form the mixture into 24 meatballs. Coat top lightly with vegetable oil spray. Heat a nonstick skillet over medium-high heat. Add patties, sprayed down, in pan. Cook about 5 minutes, turning as necessary, until brown and no pink remains. Reduce heat if cookies begin to brown too quickly.
This makes 8 servings of 3 pancakes each. Per serving: 73 calories, 1 g carbohydrate, 12 g protein
After cooking, patties can be refrigerated in a plastic freezer bag plastic bag for up to four days or freeze for up to 6 weeks. To reheat, place on plate microwave oven, cover with waxed paper or paper towels. Microwave on medium power for 1 minute or until hot. EASY CINNAMON SPREAD
1 / 4 cup softened butter or Margaine
1 / 4 cup packed brown sugar 2 tsp Soup OR Splenda Brown Sugar Blend
1 tsp teaspoon ground cinnamon
1 / 4 c. ground nutmeg
Mix all ingredients in a small mixing bowl.
For a quick and easy "French toast" spread the mixture on half whole wheat toast or whole wheat mini bagel.

CHEESY HAM NUGGETS
2 v. tablespoons butter, softened
1 cup shredded cheddar cheese low fat
1 / 2 cup flour
1 / 2 c. paprika
2 v. tablespoons water
pinch of salt
1 pound cooked ham, cut into 20 cubes
Mix butter, cheese, flour, paprika, water and salt and mix well with a fork. Forms a thin layer of cheese mixture around each piece of ham. Place on a greased cookie sheet. Bake at 400 degrees for 15 minutes or until lightly browned.

1 cup diced bell pepper
