How can I be stringent to avoid gluten for celiac disease? I have a provisional diagnosis of celiac disease, but were without symptoms - with the exception of some absorption problems. So now I have to live gluten free. But I'm the mom, chief clerk and bottle washer. How do I pay attention to when I do regular food for my family? Can I still cook for their light, fluffy and tender cake with a birthday cake flour? Sandwiches on regular bread for them? Since I have no symptoms, is not it going to be impossible to say how much is too much?
