Game meat or meat from wild animals and birds, is gaining popularity both in the low-carb eating and paleolithic communities and beyond. Although it may seem strange to some, when we contrast the qualities of wild game with farmed game, you may be surprised at the sweetness, taste lean game. Wild game meat is extremely high in protein and low in carbohydrates, the benefits have led to increased demand, especially as consumers try these pieces of meat and how well they learn the taste and how they are easy to prepare. While meat is rarely available in supermarkets, specialty suppliers sell direct to the consumer market; farmed game are specifically designed for the consumer market, and you can often see choices such as buffalo, ostrich, elk, caribou, and even rattlesnake menus of local restaurants.

Elk and ostrich are two types of game meat sometimes seen on menus and through online vendors. Elk, for example, contains less fat than most meats, poultry and fish products and elk meat is typically extremely thin, usually slightly less than 1% fat. From ostrich meat is very lean with a low fat content and are very low in cholesterol. Ostrich generally varies from 2 to 3% fat, compared with ham that is about 6% fat, chicken fat and 2-4% of roast beef 6-10% fat. Buffalo meat is much leaner than beef and contains 30% less fat. Buffalo burgers and buffalo steaks enjoy cooking at lower heat levels, and tend to be denser in texture compared to beef. Buffalo meat is just a little sweeter than beef, as well. It can be cooked the same way as beef, and can easily be substituted in recipes. Alligator meat has been a staple of menus Florida for years, with good reason. With a taste similar to veal, alligator meat is white meat with about the same consistency as chicken breast, but more dense in flavor and a bit softer, but not difficult. So with all these great choices, you're sure to find a healthy game meat to add to your repertoire!
