I pampered Dublin and have a question ...? The sausage and bacon supposed to be golden before cooking with the onions and potatoes? Also, my recipe does not require a lot of liquid. I know it's supposed to be more a stew of soup, but how long does it take to cook the potatoes and onions correctly? If you have any advice or if you want to share a recipe, this Yank would appreciate!
I'm going home right now to try the recipe Auntyeim, never tried with cider before she discovered a suspicious Fri night after a visit to the pub! I can just see swinging around the pan with a wooden spoon in one hand and a glass of cider in the other. OOPS!

Dublin Coddle
2 pounds pork sausage seasoned
2 large onions, diced
1 pound bacon
2 cloves garlic, sliced
4 potatoes, peeled and sliced
2 carrots, sliced
herbs
pepper (to season)
hard cider or cider without alcohol
Heat oil in a skillet, add onions and garlic and fry until soft.
Put the sausages, bacon, potatoes and carrots in the pan with the onions and garlic.
Cover with cider and cook over medium heat for 1 hour
Where are you. I hope this is not Dublin!
