recipe for oatmeal cookies diabetic? I need a recipe for oatmeal cookies I diabetic serched the web and is so confused that I am not diabetic and you want to make cookies for one pls help workers' cooperatives
I do not have the recipe but I had cookies and said it was monitoring the weight of a "recipe so it can be seen on the ... check it out. It could also be in one of the old WW cookbooks.
Crispy Oatmeal Cookies
Diabetic Recipe
Ingredients
1 / 3 cup butter or margarine
1 / 3 cup packed light brown sugar
1 / 4 cup hot water
1 cup flour, divided 1 / 4 cup for later
1 cup quick oatmeal
1 teaspoon cinnamon
1 / 2 teaspoon baking soda
Directions:
butter and the sugar melts, then whisk in water. Set aside 1 / 4 cup of flour for rolling. Combine remaining dry ingredients, then add to creamed mixture.
Add remaining flour gradually to the dough until firm enough to roll. Divide the dough into 3 pieces of the same size. Roll each piece of dough about 1 / 8 inch thick and cut into 12 pieces about the same size. It is much easier than trying to use a cookie cutter if you need to know the cookies per serving.
Place on lightly greased cookie sheet. Bake at 350 degrees about 10 minutes or until golden brown on edges. Remove from pan, let cool. Store in a covered container.
Makes about 36 cookies.

Oatmeal Cookie Ice Cream Sandwiches
1 1 / 2 cups (234 g) rolled oats
1 / 2 cup (60g) flour, unbleached
1 / 2 teaspoon (7.5 ml) ground cinnamon
1 / 2 teaspoon (2.5 ml) baking soda
1 teaspoon of one to one replacement of sugar
2 1 / 2 tsp tablespoons (37.5 ml) of frozen peaches or pear juice concentrate, thawed
1 / 2 cup (120 g) margarine stick reduced fat, melted
butter-flavored refrigerated cooking spray
3 cups (580 g) fat-free, sugar-free vanilla ice cream
Preheat oven to 375 ° F (190 ° C), Gas Mark 5.
In a large bowl, combine oats, flour, cinnamon, baking soda, and sugar substitute. Add the thawed fruit juice and margarine. Mix well.
Drop by teaspoonfuls on a cookie sheet lightly coated with nonstick cooking spray. Bake 10 minutes, until lightly browned. Let stand on baking sheet for several minutes until you transfer them to a rack to cool.
To assemble sandwiches, place 6 cookies on a platter, bottom side up. Top each cookie with 1 / 2 (48 g) of ice cream. Place another cookie on top and press together gently. Serve immediately. Store cookies in an airtight container remaining.
Cookies Oatmeal Raisin - diabetic
1 / 2 c. butter
1 egg
3 / 4 c. flour
1 tsp oatmeal
1 / 4 c.. salt
1 / 2 c.. soda
1 1 / 4 c. tea. liquid artificial sweetener
1 tsp tea. vanilla
1 / 4 C. raisins
5 c. soup. orange juice concentrate, undiluted
Mix all ingredients together and drop by teaspoonfuls on a cookie sheet, flatten. Bake at 350 degrees for 15-20 minutes.
Makes about 40 cookies
substitute honey for sugar and add a teaspoon of cinnamon in the recipe oatmeal cookies plain, and reduce the liquid in the recipe proportional to the amount of honey you use. DO NOT use artificial sweeteners! These react with diabetes, and make it worse. Small amounts of honey will not harm a person suffering from this disease.
