Are you promising you to start the new year on a note healtier? Perhaps you or someone you know been recently diagnosed as diabetic or maybe you just want to reduce the sugar in the diet of your family. Here are some cookie recipes for you to try. I was diagnosed with type 2 diabetes when I was sixty. I experiment with recipes without sugar all the time. My granddaughter loves me 4 years in the kitchen. I think she likes to eat sugar free cookies the same as the "sugar" the. If you start the kiddos on less sugar when they are young, you're doing them a favor and they do not even realize they are eating healthier. The Bananan-Sugarless Oatmeal Cookies are good initially. Bananas add moisture (a problem in cooking without sugar) and natural sweetness. Jno Sugar Added Oatmeal Raisin Cookies are also good as a cookie oatmeal adds a little moisture and raisins add natural sweetness.



BANANA-Oatmeal cookies without sugar



3 bananas, mashed



2 cups oats, uncooked quick-cooking



1 / 2 cup raisins



1 / 3 cup melted butter



1 / 4 cup nonfat milk



v. vanilla extract 1 tsp



In a large bowl, mix all ingredients together, beating well. I mix together for 5 minutes for oats to absorb moisture. Drop by teaspoonfuls on ungreased cookie sheets. Bake at 350 degrees for 15-20 minutes. Let stand 1 minute before removing from cookie sheet. Remove to rack to cool.



Note: Use medium to large ripe bananas. Using small ripe bananas or just make your biscuits. If your bananas are small, use 3 1 / 2 to 4.



WITHOUT ADDED SUGAR COOKIES Oatmeal Raisin




2 eggs or 1 / 2 cup egg substitute




1 / 2 cup canola oil




1 tsp tea. vanilla




1 tsp tea. cinnamon




3 c. tea. yeast




5 packets Sweet 'N Low (or your favorite sugar substitute packets)




1 / 2 cup milk




1 / 2 c.. salt




3 / 4 cup flour




2 cups raw oatmeal




raisins 1 / 2 cup




Beat together eggs, oil, vanilla, milk, cinnamon, baking powder, salt and Sweet 'N Low. Add flour and mix well. Add raisins and oats. Mix well and drop by spoonfuls on a cookie sheet that has been sprayed with vegetable oil NOTE. Bake 25 minutes. Cool slightly before removing the cookie sheet.: These cookies freeze well.
