Anyone have Jam and / or chutney recipes suitable for a diabetic? Husband recently diagnosed with type 2 diabetes. Controlled diet
Strawberry Jam
4 cups strawberries, halved
1 / 2 cup white grape juice concentrate (brewed from 1-1/2 cups)
2 1 / 2 tsp tablespoon lemon juice
1 / 4 c. lemon zest
1 1 / 2 tsp tablespoon unflavored gelatin (1-1/2 envelopes)
Recipe Instructions:
Place juice and lemon zest in a saucepan.

1 cup raisins
1 cup chopped pecans
Recipe Instructions:
Quarter and pit plums to measure 10 cups. Combine plums and zest
lemon in a large saucepan. Squeeze the lemon juice and add water to

stirring often. Stir in Splenda and raisins. Simmer rapidly, stirring

sterilized jars to 1 cup of canning, leaving 1 / 2 inch headspace. Remove any air
bubbles by running a knife in the interior of the jars. Apply canning two parts

water bath 15 minutes. Cool. Store in cool, dark place. Makes 6-1/2
