Can someone give me a banana bread recipie DIABETIC good? My roommate is diabetic and eats lots of bananas, but it is in the hospital, and they start to go wrong. I thought about making banana bread diabetic and bring it to him, but I can not get a good recipe to. Suggestions?
Diabetic-Friendly Banana Bread Recipe
8 tablespoons (1 / 2 cup) low fat spread, plus extra for greasing
1 teaspoon baking soda
2 cups whole wheat flour
2 eggs, beaten
3 very ripe bananas
2-3 tablespoons of coconut milk or unsweetened soy milk
Instructions:

Mix the mashed banana, buttermilk, oil and vanilla. Sift flour, baking powder, baking soda and salt over the mixture and beat until just blended. Pour prepared pan.
Bake the bread until golden on top and toothpick inserted in center comes out clean, about 1 hour. Turn out the bread on a rack and let cool.
