"My grandmother Recipe for roasted chicken. We are German and she used to be this way all the time. I've never had a chicken this juicy before, this little trick works and makes people eat it stopped. That's funny. We nibble celery after. "
INGREDIENTS:
1 (3 lb) whole chicken
giblets removed
salt and black pepper to taste
1 tablespoon onion powder, or to taste
1 / 2 cup margarine, divided
1 stalk celery, leaves removed

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Place chicken in a roasting pan and season generously inside and out with salt and pepper. Sprinkle inside and out with onion powder. Place 3 tablespoons of margarine in the cavity of the chicken. Place spoonfuls of the remaining margarine around the outside of chicken. Cut celery into 3 or 4 pieces and place in cavity of chicken.
3. Bake uncovered 1 hour and 15 minutes in oven preheated to a minimum internal temperature of 180 degrees F (82 degrees C). Remove from heat, and baste with melted margarine and drippings. Cover with foil and let stand about 30 minutes before serving.

"My family loves this chicken! It is always so tender and moist and a perfect dinner Sunday. The bacon helps to 'baste' the chicken while cooking. Recipe can be adapted to any size whole chicken. "
INGREDIENTS:
2 tablespoons butter
1 (4 pound) whole chicken
salt and pepper to taste
1 tsp teaspoon dried thyme 2 carrots, chopped
paprika to taste
8 slices bacon
2 cups beef broth

DIRECTIONS:
1. Preheat oven to 450 degrees F (220 degrees C).
2. Rub the butter on whole chicken. Season with salt, pepper and thyme. Place the carrots inside the cavity and tie the legs together. Place chicken breast side in a roasting pan. Lay bacon slices on top of the chicken and secure with toothpicks. Sprinkle with paprika. Pour beef broth into the roasting pan - do not pour over the bacon.
3. Roast for 15 minutes in the preheated oven, reduce temperature to 350 degrees F (175 degrees C). Brush with a little broth. Continue to roast for 1 hour and 15 minutes, or until internal temperature is 180 degrees F (82 degrees C) when taken in the thickest part of thigh. Baste every 15 minutes with the broth.
4. Remove bacon and discard toothpicks. Roast chicken for 15 minutes more to brown the skin. Transfer to a serving platter, and remove the links. You can eat bacon, but it is better to throw the carrots.

Here's a different style for you ...
