Chicken Breast Recipes - quite delicious!

The chicken recipes are delicious. Just check them and I'm sure you'll be amazingly surprised.

Mexicali Chicken

• 4 chicken breasts, split
  
• 4 eggs
  
• 1 t garlic powder
  
• tomato wedges
  
• Dairy sour cream
  
• 1 cup whole dried oregano, crumbled-
  
• 1 / 4 C Butter or margarine, melted
  
• Shredded Ice Burg Lettuce
  
• 1 / 4 C. bottled taco sauce
  
• 1 / 2 ts Salt
  
• 2 c fine dry bread crumbs
  
• 2 ts chili powder
  
• 2 ts Cumin
  
• Grated Cheddar or Longhorn
  
  
  Remove skin from chicken breasts and wipe with a damp paper towel. Beat eggs in a pie plate or shallow bowl with a fork and beat the taco sauce and salt. Combine bread crumbs, chili powder, cumin, garlic powder and oregano in second pie plate or dish.
  
  Dip chicken breasts in egg mixture, then into crumb mixture to coat. Arrange in single layer in a jellyroll pan and pour a large melted butter. Bake in an oven at 375 F for 35 minutes until crisp and tender.
  
  To serve, pile lettuce on a large platter. Arrange the cooked chicken on top. Garnish with grated cheese, chopped tomatoes and sour cream. Serve hot, warm or at room temperature.
  
  Makes 8 servings.

Chicken Bacon

• 6 whole chicken breasts (boneless skin, salt lightly)
  
• 2 bunches scallions
  
• 8 oz cream cheese
  
• 1 lb. (Bacon more or less)


Mix cream cheese and chopped onions, shape into 12 balls of nut size. Wrap half a chicken breast around each, and one or two slices of bacon around it to cover as much chicken as possible.

Secure each small package with a toothpick or two. Then broil on a rack with a drip pan below 6 to 8 inches from the broiler unit. Turn occasionally as they brown, and broil about 30 minutes, or until bacon is done.
