I'm looking to expand my diet a bit. I'm looking for sites / cookbooks that contain cheap, easy to prepare meals for vegans. Everyone knows everything? Non-Poncy books / sites only please.

Hello, if you like risotto, you can make a single vegetable (I use water no stock for my risotto), instrution on the package on how to make one, depends on the density of vegetable , onion, eg, add the beans near the beginning of cooking vegetables does not need much cooking add to the end.

CURLY Pasta Salad



Ingredients

1 12 oz Rotini Rainbow Package
1 package 16 ounces frozen chopped broccoli and cauliflower, thawed (or use fresh vegetables and blanch in water for pasta in the last moments of cooking)
1 cup sliced fresh mushrooms
4 green onions, chopped
February 1 chopped pimientos oz.jar or roasted red pepper
1 / 2 cup cherry tomatoes, halved
1 cup honey Dijon dressing without oil
Aminos 2 tablespoons soy sauce or Bragg Liquid
Dry or fresh pasta
freshly ground black pepper to taste
Dash of Tabasco, optional



Instructions

Bring 4 quarts water to boil, add pasta and cook according to package directions. Drain. Rinse under cold water and set aside.

Thaw vegetables under running cold water until completely thawed.

Put the pasta in a large bowl. Add all vegetables. Mix honey-Dijon dressing and soy sauce and pour. Stir to mix well. Season with black pepper and Tabasco. Refrigerate at least 2 hours before serving.

Servings: 6

I cook for my family of 6 and try to take cheap and tasty for everyone. Four of the six of us are vegan, but my husband and son are 18 years of eating meat. I never cook meat, so they have to eat my vegan. I want to ensure they satisfied with the food I make and eat, my picky 15 years old, 5 years old and 2 yr old can be difficult.
