Can you substitute for chorizo sausage? I found a recipe for a bean pot and that calls for andouille sausage (spelling?) Sausage, chorizo, but I have at home that I need to use up. Can I use in place of chorizo sausage? Thank you.
As a former chef, I am a Portuguese sausage dish choricuo, potatoes and beans, it will be fine, the kitchen is well before, but the fat add lots of flavor, the only real difference between the two sausages is the andouille is smoked sausages were the Spanish and not Portuguese, you can taste a rich Brown Nice, and cook the onion for your beans in grease and caramelize for even more flavor and taste.

Yep texture, and tastes differently. But if you really want to use this sausage with beans, it should taste very good. Just Brown and drain the fat before adding it to your pot of beans. Can be a great recipe adjustment.
Many foods can not be compared with chorizo! the flavor and taste are invaluable, if I were you, I go ahead and use chorizo and forget it! - My opinion.
I would use the chorizo is as if the dried variety. The costs do tend to be fat, so I would make some of the first fat.
you can, but I would say the chorizo braised first to soften it, flavor wise, the only difference is a little more smokey flavor in the sausage
